Flavanols are active antioxidants found
in cocoa. The antioxidants found in cocoa belong to the group of
the polyphenols, in particular the flavanols. In cocoa, polyphenols
are present in abundance, even more than in red wine, tea, and
specific kinds of vegetables or fruit.
Flavanols naturally occur in substances found in foods that prevent
or inhibit oxidation. Oxidation or oxidative stress is the negative
effect oxidation in the body brought about by environmental pollution,
second hand cigarette smoke, pesticides, or even ultra violet
light from the sun, and creates free radicals. Free radicals
are also created by the body as part of normal metabolism. Free
radicals are harmful and cause damage to the body’s cells.
Fortunately, plants produce antioxidants. Fruits and vegetables
contain the greatest amount of antioxidants in nature. Some of
the richest sources can be found in the cocoa bean, acai berries,
walnuts, almonds, cinnamon, pomegranates, black grapes, gogi

The USDA website recommends a daily antioxidant intake range of at least 3,000 to 5,000 ORAC. Studies in the U.S have shown that the average consumption is only 1,500 ORAC units per day.

The preservation of cocoa flavanols passes through several stages: from harvesting and processing of the cocoa bean to the production of cocoa.
